My sister called me today asking for a good carrot cake recipe that I know of and I found this.  It’s the very first (one out of two really, it’s not like I have a lot) recipe that I created myself.  So here it is, enjoy!

Carrot Cake

Ingredients

  • 2 Cups All Purpose Flour
  • 2 teaspoons Baking Powder
  • 1 1/2 teaspoons Baking Soda
  • 1 teaspoon Salt
  • 2 1/2 teaspoons Cinnamon
  • 4 Eggs
  • 1 1/4 cups Vegetable Oil
  • 2 cups Sugar
  • 2 3/4 cups Shredded Carrots
  • 1 8oz can of Crushed Pineapples (do not drain)
  • 3/4 cup Chopped Walnuts
  • 1 cup Flacked Coconut
  1. Preheat oven to 325 degrees
  2. Mix flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, mix sugar, oil, and eggs.  Beat in flour mixture. Stir in shredded carrots, pineapple, chopped nuts, and coconut.
  4. Bake in oven for 35-40 minutes.
